Allergens in the diet of school-aged children

Abstract:

Diplomová práce je zaměřená na vlivy alergenů a racionální výživu ve stravě dětí školního věku. Byl vytvořen rozšiřující učební materiál pro výuku témat v předmětu potraviny a výživa, technologie, dietologie a stolničení s tématem a uplatněním racionální výživy. Teoretická část obsahuje rozšiřující informace o historii školního stravování, spotřebního koše a výživové pyramidy, druhy alergií, alergeny v potravinách racionální výživy. Empirická část práce zahrnuje výsledky šetření, které byly provedeny u žáků středních škol – obor kuchař číšník. Jedná se o dotazníkový výzkum, kde jsou pokládány otázky o zdravé výživě. Cílem bylo poukázat na to, že na základní škole jsou nedostatečně vyučovány předměty o zdravé výživě. Žáci mají nízké znalosti v oblasti zdravé výživy, složení potravin a tím i ve vytvoření zdravého životního stylu. Tyto vědomosti mohou žáci uplatnit ve svém budoucím osobním i pracovním životě. Výsledky dotazníku byly vyhodnoceny a znázorněny pomocí tabulek a grafů.

Abstract:

The diploma thesis is focused on influences of alergens and rational nutrition in the diet of school - aged children. Extensive teaching material has been created for teaching the topics in the subject of groceries and nutrition, technology, dietology and stooling with topic of application rational nutrition. The theoretical part include expanding information about history of school meals, consumer basket and nutritional pyramid, types of allergies, allergens in food, rational nutrition. The empiric part of the thesis includes results of the investigation, which were done at secondary school pupils – specialization chef, waiter. This is a questionnaire survey where questions about healthy nutrition are posed. The aim of the thesis was to point out that subjects about healthy nutrition aren´t sufficiently taugh at elementary school. Pupils have got low knowledge in the area of health nutrition, food composition and this creation of healthy lifestyle. This knowledge could be used by pupils in their future personal and working life. The results of the survey were evaluated and presented with help of tables and graphs.
