Application of sterilization techniques in foodstuff industry and packaging technology

Abstract:

V bakalářské práci je popisována problematika sterilizace obalových materiálů využívaných v potravinářském průmyslu. Důraz je kladen na vývoj, typy, kladné a záporné vlastnosti jednotlivých druhů obalů, dále na možné způsoby sterilizačního procesu, jeho popis a kontrolu a v neposlední řadě na legislativní požadavky platné jak pro EU, tak Českou republiku, které se k této problematice vztahují. Obaly, ve kterých jsou potraviny uchovávány či přepravovány se mohou stát zdrojem mikroorganismů, které jsou schopny negativně ovlivnit senzorické nebo mikrobiologické vlastnosti dané potraviny a potažmo naše zdraví jako finálních konzumentů.

Abstract:

The Bachelor thesis describes the sterilization of packaging materials used in the food industry. Emphasis is placed on the development, types, positive and negative characteristics of individual types of packaging, as well as possible ways of the sterilization process, its description and control, and last but not least on the legislative requirements applicable to both the EU and the Czech Republic. Packaging in which food is stored or transported can become a source of microorganisms capable of adversely affecting the sensory or microbiological properties of the food and hence our health as final consumers.
