Analysis of School Catering in the Karlovy Vary Region

Abstract:

Cílem bakalářské práce je zjistit, zda vedoucí pracovníci školních jídelen, kteří se podílejí na sestavování jídelních lístků, nabízejí svým strávníkům pestrou, nutričně vyváženou a hodnotnou stravu. V teoretická část se zabývá tématy, která souvisejí s výživou a stravováním dětí školního věku, jako jsou zásady správné výživy. Dále se zmíním o historii školního stravování ukazující na počátky stravování ve školních jídelnách, o legislativním rámci, systému kritických bodů HACCP a alergenech. V analytické části je představen projekt „Zdravá školní jídelna“ a blíže dokument „Nutriční doporučení ke spotřebnímu koši“, který přináší intuitivní doplněk spotřebního koše stanoveného vyhláškou ministerstva školství (vyhláška 107/2005 Sb., o školním stravování), který zároveň využiji v analytické části pro zjištění pozitiv i negativ sestaveného jídelního lístku šesti školních jídelen z Karlovarska, Sokolovska a Chebska, ve kterých jsem provedl šetření pomocí strukturovaného rozhovoru s vedoucími školních jídelen a dále získal měsíční jídelní lístky, díky kterým se pokusím zjistit jejich pozitiva i negativa, popřípadě, jak jídelníček zlepšit. Výsledky hodnocení budou promítnuty do tabulek a grafů. Závěry z hodnocení budou podkladem k zjištění slabých míst při tvorbě jídelních lístků a k potvrzení či vyvrácení hypotéz s cílem navrhnout cesty úprav, které povedou ke kvalitnímu výsledku. Z šetření vyplynulo, že tři z šesti jídelen jsou zapojeny v projektu „Zdravá školní jídelna“, z čehož jedna školní jídelna získala certifikát. Dále jsem dospěl k závěru, že jídelní lístky jsou nutričně vyvážené, ale s přihlédnutím k metodice „Nutriční doporučení ke spotřebnímu koši“ vykazují drobné nedostatky.

Abstract:

The goal my bachelor’s dissertation is to uncover if the cafeteria supervisors, which are responsible for assembling the meal plan, offer their students variety and nutritionally well-balanced meals. In the theoretical part I will explain topics that are related to well-balanced meal plans of school age children. Further, I will discuss the history of school meal plans which points directly to the beginning of meal plans in school cafeterias, legislative frame, system of critical points of hazard analysis and critical control points (HACCP), and allergens. Closely In the analytical part introducet project „Healthy school canteen“ and document “Nutritional recommendation for consumers”, the document will bring intuitive addition regarding consumers that is based on regulation of Department of Education (regulation 107/2005 Sb., about school meal plans). I will use this document in analytical part to detect positives and negatives of the assembled meal plan of six cafeterias that are in Carlsbad, Sokolov, and Cheb district. At these cafeterias, I conducted research based on structured interview with the cafeteria’s supervisors, where I further obtained a monthly meal plans. Based on these meal plans I will try to find out the positives and negatives or possibly offer suggestion how to improve the meal plan. The results will be placed in chart and graph. The conclusion of these assessments will be used as a foundation for detection of weak point when meal plan is created, also theory approval or disapproval with the goal to suggest the way of modification that will lead to beneficial outcome. The research displayed that three out of six cafeterias are part of project called “Healthy school cafeterias” where one cafeteria obtained certificate. In my opinion, school meal plans are nutritionally balanced, but in accordance with “Nutritional recommendation for consumers” there are some minor flaws.
