Warm must stabilisation and its impact on aromatic profile of wine

Abstract:

Diplomová práce na téma Teplá stabulace a její vliv na aromatický profil vína se zabývá možností využití zahřívání moštu u bílých moštových odrůd ‚Rulandské šedé‘ a ‚Hibernal‘. První kapitoly práce se věnují popisu složení moštu, maceraci a stabulaci moštu. Následuje experimentální část, ve které je popsán vliv teploty, času a množství kalu na kvalitu výsledného vína. Její součástí je charakteristika použitého materiálu, včetně podrobného popisu přípravy jednotlivých variant, analytická měření, statistické vyhodnocení a doporučení do praxe. Výzkumem se potvrdilo, že použití teplé stabulace pozitivně ovlivňuje obsah aromatických a fenolických látek, bílkovinnou stabilitu moštu i vín bez přídavku bentonitu. Nejlepších výsledků bylo dosaženo u odrůdy ‚Rulandské šedé‘ po teplé stabulaci při 60 °C po dobu šesti hodin s přídavkem 10 % kalu a u odrůdy ‚Hibernal‘ při 70 °C po dobu jedné hodiny s 10 % kalu i bez kalů.

Abstract:

The diploma thesis on Warm must stabilisation and its impact on aromatic profile of wine deals with the possibility of using warm must stabilisation in white grape varieties 'Pinot Gris' and 'Hibernal'. The first chapters of the thesis are devoted to the description of the composition of the must, maceration and stabilization of the must. The experimental chapters follow in which there is described the influence of temperature, time and amount of lees on the quality of the resulting wine. It includes a characterization of the material used, including a detailed description of the preparation of each variant, analytical measurements, statistical evaluation and recommendations for practice. Research has confirmed that the use of warm stabilization positively affects the sensory properties of wine, the content of aromatic and phenolic compounds, the protein stability of must and wines without the addition of bentonite. The best results were obtained for the 'Pinot Gris' variety after warm stabilisation at 60 °C for six hours with the addition of 10 % lees and for the 'Hibernal' variety at 70 °C for one hour with 10 % lees and without lees.
