Abstract:

Abstrakt Beyerová, K. Trendy v současné gastronomii [Bakalářská práce] Vysoká škola hotelová. Praha: 2017. 76 stran. Bakalářská práce na téma Trendy v současné gastronomii je rozdělena do tří hlavních částí. Teoretická část se zaměřuje na historii gastronomie a její vývoj. Především se soustředí na vybrané gastronomické trendy dnešní doby, ale také na šéfkuchaře, kteří se zapsali do kulinářského podvědomí. Dále pojednává o vývoji inventáře a stylu oblékání zaměstnanců v pohostinství. Cílem Analytické části je analyzovat a sledovat vývoj gastronomie a uplatňování nových trendů v gastronomických službách v hotelu Grand Bohemia. Tudíž se zabývá vývojem hotelu a zaměřuje se nejen na gastronomické služby, ale také banketní služby, vybavení a inventář. Informace jsem čerpala především ze svých zkušeností z působení v hotelu Grand Bohemia, ale také z informací hotelového magazínu, z dokumentů poskytnutých hotelem, z interního rozhovoru a obecně známých trendů. V návrhové části se zmiňuji o některých změnách, které by prospěly hotelu se více zviditelnit nebo ho zpestřit.

Abstrakt: Beyerová, K. Trends in contemporary gastronomy. [Bachelor’s Dissertation] The Institute of Hospitality Management. Prague: 2017. Total number of pages 76. The bachelor thesis on Trends in contemporary gastronomy is divided into three main parts. The theoretical part of the thesis focuses on the history of gastronomy and its development. Above all, it focuses on specific gastronomic trends of today, but also on chefs who have enrolled into our subconscious. It also discusses the development of the inventory and the style of staffing in the hospitality industry. The aim of the analytical part of the thesis is to analyse and monitor the development of gastronomy, the application of new trends in gastronomic services at the Hotel Grand Bohemia. Subsequently, the thesis examines hotel’s development and focuses not just only on the restaurant service, but also on banquet services, inventory and equipment. The basis of the analytical part comes from my personal experience at the Hotel Grand Bohemia. Furthermore, I accessed the hotel jubilee magazine, the documents provided by the hotel and interviewed staff members on generally known trends. At the last part I suggest certain changes to improve the hotel performance and how to make it more diversified.
