Analysis of aspects influence visiting in restaurants

Abstract:

Bakalářská práce je zaměřena na analýzu aspektů ovlivňujících návštěvu restaurace. Práce je rozdělena na 3 části: teoretickou, analytickou a návrhovou. Teoretická část zahrnuje informace získané z odborné literatury a vymezuje pojmy spojené s gastronomií a pohostinstvím. Analytická část obsahuje analýzu aspektů ovlivňujících návštěvu restaurace získanou pomocí dotazníkového šetření. Dále obsahuje slovní i grafické hodnocení těchto aspektů v 15 mnou vybraných restauracích v Praze a na Moravě pomocí metody Mystery Guest. Závěr analytické části zahrnuje slovní i grafické vyhodnocení nejlépe hodnocených restaurací, slovní i grafické vyhodnocení nejlépe hodnocených aspektů ze všech restaurací a výsledky stanovených hypotéz. Cíle mé práce jsou 2: Cíl 1 je vytvořit analýzu aspektů, které ovlivňují návštěvu restaurace a vyhodnotit nejdůležitější a nejméně důležité aspekty. Cíl 2 je zhodnotit jednotlivé vybrané aspekty v 15 mnou vybraných restauracích v Praze a na Moravě. Na tyto cíle se vážou 4 stanovené hypotézy. Návrhová část obsahuje výsledné zjištěné informace a jejich shrnutí a návrhy vedoucí k pozitivním změnám v restauracích. V závěru jsou shrnuty stanovené hypotézy, zopakovány cíle mé bakalářské práce a její přínosy.

Abstract:

The Bachelor thesis is focused on analyzing aspects influencing visiting restaurants. The thesis is devided into 3 parts: theoretical, analytical and stating suggestions. The teoretical part includes information based on specialized literature and determines terms associated with gastronomy and hospitality. The analytical part includes an analysis of aspects influencing visiting restaurants obtained by using a questionnaire. It also includes verbal and graphical evaluations of these aspects in 15 selected restaurants in Prague and Moravia by the method of Mystery Guest. The conclusion of analytical part contains verbal and graphical evaluation of the best rated restaurants, verbal and graphical evaluation of aspects to the best of all the restaurants and the results of the hypotheses. The aims of my work are 2: Aim 1 is to analyze the aspects that influence visiting restaurants and to evaluate the most important and least important aspects. Aim 2 is to assess the individual selected aspects in 15 selected restaurants in Prague and Moravia. These aims are bound with 4 hypotheses. The part stating suggestions includes the findings and the resulting summary and suggestions leading to positive changes in restaurants. The conclusion summarizes stated hypotheses, repeates the objectives of the thesis and its benefits.
