Abstract:
Bakalářská práce se věnuje biologicky aktivním látkám v kávě. První část práce se tyká historie kávy, charakteristiky kávových stromů, výroby kávy od kroku sklizně až po pražení a další úpravy, typů kávy dle stupně pražení.Druhá část práce je zaměřená na chemické složení kávového zrna a biologicky aktivní látky, jejich obsah a vliv na organismus člověka, což je hlavním tématem této práce. Bachelor thesis deals biologically active substances in coffee. The first part of work is include the history of coffee, the characteristics of coffee trees, the production of coffee from the step of the harvest to the roasting and other adjustments, the types of coffee according to the degree of roasting.
