Chemical and physical properties of linden syrup

Abstract:

Tato diplomová práce se zabývá chemickými a fyzikálními vlastnostmi různě připravených lipových sirupů. V teoretické části jsou popsány biologicky aktivní složky lipového květu a jejich účinky. Dále je popsáno, v jakých formách se lipový květ využívá s ohledem na platnou legislativu. Na závěr teoretické části jsou uvedeny metody, které byly využity v části praktické. Praktická část se pak zabývá přípravou lipových sirupů a jejich výslednými vlastnostmi, které jsou následně sledovány i během skladování. Mimo jiné byla změřena i infračervená spektra lyofilizátů připravených lipových sirupů.

Abstract:

This thesis examines the chemical and physical properties of linden syrup prepared by different methods. The theoretical part describes the biologically active compounds and their effects on human health. After that, various uses of linden flower as a food ingredient or medicine herb with the relation to the legislation are described. Analytical methods used in the practical part of thesis were characterized. The chemical and physical properties of linden syrup prepared by different methods as well as their changes during storage were examined. For lyophilized syrups, the infrared spectra were also collected.
