Tato diplomová práce pojednává o kvasinkách Brettanomyces bruxellensis, zjišťuje, která výrobní fáze je nepříznivější pro jejich množení a jestli má počáteční množství kvasinek vliv na jejich množství ve finálním víně. Abstract:
This diploma thesis is about Brettanomyces bruxellensis yeasts, which production phase is most favorable to their growth and if the amount of the yeasts on the beginning has influence on the amount of the yeasts in the final wine.
