Abstract:

Tato rešeržní bakalářská práce se zabývá analýzou odrůd modré a purpurové pšenice z hlediska obsahových látek a změnch jejich obsahu při zpracování. Důraz byl kladen zejména na obsah fenolových kyselin, karotenoidů a flavonoidů, hlavně pak anthokyanů. První část této bakalářské práce pojednává o pšenici jako takové. Zabývá se morfologickou stavbou zrna a jejím chemickýcm složením s důrazem na sacharidy, bílkoviny, lipidy, minerální látky a vitaminy. V další části práce autor pojednává o odrůdách pšenice, na které se tato práce zaměřuje a v dalších kapitolách porovnává obsah specifických látek v nich, konkrétně fenolových kyselin, flavonoidů a karotenoidů. Dále pak se tato práce zaměřuje na způsoby zpracování zrna pšenice a jejich vlivu na obsah zmíněných látek v dané odrůdě pšenice. V této kapitole byly probrány procesy mletí, výroby chleba, výroby těstovin a nudlí a dalších potravin. V poslední části pojednává o druhů stanovení oněch obsahových látek. Zmíněny jsou HPLC, UV/VIC spektrofotometrie a spektrofotometrická PH-diferenciální metoda.

Abstract:

This research bachelor thesis deals with the analysis of blue and purple wheat varieties in terms of their content and changes in their content during processing. Emphasis was placed in particular on the content of phenolic acids, carotenoids and flavonoids, especially anthocyanins. The first part of this thesis deals with wheat as such. It deals with the morphological structure of the grain and its chemical composition with emphasis on carbohydrates, proteins, lipids, minerals and vitamins. In the next part of the thesis, the author discusses the wheat varieties on which this thesis focuses and in the following chapters compares the content of specific substances in them, namely phenolic acids, flavonoids and carotenoids. Furthermore, the thesis focuses on the processing methods of wheat grain and their influence on the content of the above-mentioned substances in the wheat variety. In this chapter, the processes of milling, bread making, pasta and noodle making and other foodstuffs are discussed. The last section deals with the types of determination of these contents. HPLC, UV/VIC spectrophotometry and the spectrophotometric PH-differential method are mentioned.
