Vliv složení binárních a ternárních směsí fosforečnanových tavicích solí na texturní vlastnosti tavených sýrů

The effect of binary and ternary phosphate emulsifying salt mixtures composition on processed cheese spreads texture properties

Abstract:

Cílem dizertační práce bylo studovat vliv binárních a ternárních směsí vybraných fosforečnanových tavicích solí na texturní vlastnosti tavených sýrů. Vybranými tavicími solemi byly sodné soli monofosforečnanu, difosforečnanu, trifosforečnanu a polyfosforečnanu. Modelové vzorky tavených sýrů (40 % w/w sušina; 50 % w/w tuk v sušině) byly vyráběny za použití (i) binárních směsí tavicích solí, (ii) ternárních směsí tavicích solí a dále v závislosti na různé prozrálosti výchozí suroviny (2, 4 a 8 týdnů), (iii) ternárních směsí tavicích solí v závislosti na snižujíci se koncentraci těchto solí (3,0 %; 2,5 %; 2,0 %). V posledním experimentu byly vzorky vyrobeny jednak bez úpravy hodnoty pH, a dále i s úpravou hodnoty pH, a to za účelem eliminace vlivu hodnoty pH na texturní vlastnosti tavených sýrů. Vzorky byly podrobeny základní chemické analýze (obsah sušiny, hodnota pH) a texturní analýze (tvrdost, kohezivnost, relativní lepivost). Tvrdost tavených sýrů se zvyšovala přídavkem fosforečnanů v následujím pořadí: monofosforečnany < difosforečnany < trifosforečnany < polyfosforečnany. Při zvyšujícím se obsahu di- nebo trifosforečnanu (do 50-60%) ve směsi s monofosforečnanem se hodnoty tvrdosti tavených sýrů prudce zvyšují. Při následném zvýšení podílu di- nebo trifosforečnanu (ve směsi s monofosforečnanem) nad 60 % dojde k obdobně rapidnímu snižování tvrdosti tavených sýrů. Obdobný vztah byl zjištěn také při studiu vlivu různých ternárních směsí na texturu tavených sýrů. Pokud se vzájemný poměr monofosforečnanu s difosforečnanem pohyboval v rozmezí 1:1-3:4, byly tavené sýry velmi tvrdé. Toto pravidlo platilo při obsahu polyfosforečnanu do 60 %, přičemž s rostoucím obsahem polyfosforečnanu se vliv výše zmíněného specifického poměru snižoval. Při obsahu polyfosforečnanu nad 60 % již vliv specifického poměru mono- a difosforečnanu prakticky patrný nebyl. Hodnota specifického poměru mono- a difosforečnanu ovlivnila také kohezivnost a relativní lepivost modelových vzorků. Rostoucí zralost výchozí suroviny, stejně jako snižující se koncentrace tavicích solí má za následek pokles tvrdosti. Vzorky vyrobené s úpravou hodnoty pH taveniny vykazovaly stejné trendy jako vzorky bez úpravy hodnoty pH, byť absolutní hodnoty tvrdosti úpravou pH ovlivněny byly.

Abstract:

The aim of this thesis was to study the influence of binary and ternary mixtures of selected phosphate emulsifying salts on the texture properties of processed cheese. The selected emulsifying salts were monophosphate, diphosphate, triphosphate and polyphosphate sodium salts. Model samples of processed cheese (40 % w/w dry matter, 50 % fat in dry matter) were prepared by using (i) binary mixtures of emulsifying salts, (ii) ternary mixtures of emulsifying salts, and depending on the different maturity of the raw material (i.e. 2, 4 and 8 weeks), (iii) ternary mixtures of emulsifying salts, dependent upon the decreasing concentration of these emulsifying salts (i.e. 3.0 %, 2.5 %, 2.0 %). In the last experiment, the samples were made without pH adjustment as well as with pH adjustment in order to avoid the influence of pH value on the texture properties of the processed cheese mixtures. All samples were evaluated using basic chemical analysis (i.e. dry matter content, pH value) and texture analysis (i.e. hardness, cohesiveness, relative adhesiveness). The hardness of the processed cheese increased by various phosphates in the following order: monophosphates, diphosphate, triphosphate, polyphosphate. Increasing di- or triphosphates value (up to 50-60 %) in binary mixtures with monophosphate led to a rapid increase in the hardness of the processed cheese. The growing content of di- or triphosphate (up to 50-60 %) in a mixture with monophosphate led to sharp growth in hardness. Subsequent increases in the proportion of di- or triphosphate (in a mixture with monophosphate) above 60 % led to a rapid drop in the hardness of the processed cheese. A simile relationship was also found when the influence of ternary mixtures on the texture of processed cheese was studied. If the monophosphate-diphosphate ratio was in the range of 1:1-3:4, the processed cheeses were very hard. This rule is applicable when the content of polyphosphate is up to 60 %; while increasing the polyphosphate content of the above-mentioned ratio led to a decrease. When the content of polyphosphate was above 60 %, the effect of the specific ratio of mono- and diphosphate was practically unnoticeable. The value of mono- and diphosphate specific ratio also affected the cohesiveness and relative adhesiveness of the model samples. The growing maturity of the raw material, as well as decreasing the concentration of emulsifying salts, resulted in a decreased hardness value. Samples made with pH adjustment showed the same trends as samples without pH adjustment, although the absolute hardness values were influenced by pH adjustment.
