Diplomová práce je zaměřena na možnostech analýzy vybraných parametrů jablečných moštů pomocí kapalinové chromatografie. Zabývá se moštovými i nemoštovými odrůdami jablek a výrobou moštu z nich, kažením moštů, látkovým složením moštů, HPLC (vysokoúčinnou kapalinovou chromatografií) a metodami stanovení celkového počtu sacharidů a organických kyselin.
