Abstract:
Tato bakalářská práce se zabývá technologií výroby syrovátkových bílkovinných koncentrátů. Práce se zaměřuje na popis výchozích surovin a na technologický postup vedoucí k získání finálního produktu. Dále se zabývá významem těchto koncentrátů ve výživě člověka. V závěrečné části práce je kladen důraz na průzkum trhu a dostupnost syrovátkových bílkovinných koncentrátů v České republice.
Abstract:
This bachelor thesis deals with the whey protein concentrates technology. It is focused on the description of the raw materials and on the technological processes leading to the final product. It also deals with the importance of these concentrates in the human nutrition.
