Analysis of business development potential in the case of a craft bakery

Abstract:

Bakalářská práce se zabývá problematikou volby obchodní strategie rozvoje a rozšíření zavedené řemeslné pekárny. Podnik se nachází ve fázi, kdy je žádoucí rozhodnout o tom, jakým směrem svého vývoje se v budoucnu vydá. Nabízejí se dvě základní cesty. Síť poboček ve vlastnictví nebo franchising. Cílem práce je porovnat obě varianty a rozhodnout, která z cest rozvoje je rentabilnější. Teoretické část práce se věnuje základním rozdílům mezi franchisingem a sítí vlastních poboček. Následují definice pojmů z oblasti finanční analýzy a hodnocení projektů – současná čistá hodnota, vnitřní výnosové procento a index rentability. V druhé části je popsán provoz pekárny a na základě dat zkonstruovány modely vývoje dvou hypotetických investičních projektů. U modelů následně hodnocena ekonomická efektivnost použitím ukazatelů rentability. Na základě porovnání výsledků, je závěru doporučena realizace franchisové cesty, která se ukázala jako rentabilnější.

Abstract:

The bachelor's thesis deals with the choice of business strategy for the development and expansion of the established craft bakery. The company is at a stage where it is desirable to decide on the direction of its development in the future. There are two basic ways. Owned or franchised branch network. The aim of this work is to compare both variants and decide which of the development paths is more profitable. The theoretical part of the thesis deals with the basic differences between franchising and the network of own branches. The following are definitions of terms from the field of financial analysis and project evaluation - net present value, internal rate of return and profitability index. The second part describes the operation of the bakery and based on the data constructed models for the development of two hypothetical investment projects. The models are then evaluated for economic efficiency using profitability indicators. Based on the comparison of the results, the implementation of the franchise route, which proved to be more profitable, is recommended.
