Occurrence of Bacillus cereus in food
Abstract:
Bakterie Bacillus cereus se vyskytuje hlavně v prostředí, ale zároveň je to významný kontaminant potravin a může způsobovat alimentární onemocnění. Práce je zaměřena na problematiku B. cereus a jeho výskyt v potravinách, zejména mléčných výrobcích. Uvedena je také problematika faktorů virulence, zejména toxinů produkovaných B. cereus. Závěrem jsou uvedeny metody detekce toxinů i samotné bakterie.
Abstract:
Bacteria Bacillus cereus is found mainly in the environment, but it is also a significant contaminant of food and it can cause foodborn illness. This thesis is focused on B. cereus and its occurrence in food, especially dairy products. It’s also mentioned the issue of virulence factors, particularly toxins produced by B. cereus.
