Abstract:
Tato bakalářská práce pojednává o tom, co jsou toxinogenní plísně a mykotoxiny. Dále se věnuji charakteristice konkrétních rodů plísní (Aspergillus, Fusarium, Penicillium a Alternaria), kde se hovoří o jejich výskytu v potravinách a produkci mykotoxinů. Abstract:
This work deals whit toxicogenic fungi and mycotoxins. I focus on the characteristics of specific genera of fungi (Aspergillus, Fusarium, Penicillium, and Alternaria). I described their occurrence in food and their production of mycotoxins. Mycotoxins have the negative effect on the human health.
