Analysis of linalool in beer samples using multiple headspace extraction

Abstract:

Tato diplomová práce se zabývá stanovením linaloolu v pivu s využitím vícenásobné headspace mikroextrakce tuhou fází ve spojení s plynovou chromatografií a hmotnostní detekcí. V teoretické části je popsána historie výroby piva, dále jsou tu uvedeny suroviny potřebné pro výrobu piva, technologie výroby a vše o pivu, mikroextrakční techniky, plynová chromatografie a příklady použití vícenásobné headspace mikroextrakce tuhou fází. Experimentální část se zabývá stanovením linaloolu v reálných vzorcích piv již zmíněnou metodou. Tato mikroextrakční technika byla optimalizována pomocí standardního roztoku linaloolu a vzorku piva. Optimalizovanými parametry byly objem použitého vzorku, doba extrakce, teplota extrakce a doba inkubace. Následně pak byla k analýze reálných vzorků piva využita optimalizovaná mikroextrakční metoda. Na konci jsou obsahy liloolu ve vzorcích piv vyhodnoceny a porovnány.

Abstract:

This diploma thesis deals with the determination of linalool in beer using multiple headspace solid phase microextraction followed by gas chromatography and mass detection. In the theoretical part there are described history of beer production, together with the specifications raw materials needed for the beer production, production technology and all about beer, microextraction techniques, gas chromatography and principles of multiple headspace solid phase microextraction. The experimental part deals with the determination of linalool in real beer samples by the above-mentioned method. This microextraction technique was optimized using a standard linalool solution and a beer sample as well. The optimized variables were the sample volume, the extraction time, the extraction temperature and the incubation time. Subsequently, the optimized method was applied to real beer samples. Finally, the linalool contents in beer samples are evaluated and compared.
