Stabulation of white wine

Abstract:

Práce se věnovala tématu Stabulace bílých vín. V literární části je popsáno složení bobulí, moštu a kalů. Blíže jsou popsány aromatické a fenolické látky. Další část je věnována předfermentačním úpravám moštu jako je macerace, studená macerace a stabulace. V experimentální části byl vyhotoven pokus na odrůdě Hibernal ročníku 2021 a 2022. Bylo vyrobeno víno ze stabulovaného moštu po dobu 3, 7 a 14 dnů a kontrola bez stabulace. Z moštu před stabulací, po stabulaci a z hotového vína byly odebrány vzorky pro analýzu základních parametrů vína, obsah fenolických sloučenin, antiradikálovou aktivitu a volatilní sloučeniny. Vína byla hodnocena i senzoricky. Z výsledků byl zjištěn nejvýraznější nárůst vyšších alkoholů, konkrétně isoamylalkoholu u vína ročníku 2022 a to z 258,92 mg.l-1 (kontrola) na 585,32 mg.l-1 (14 dnů). Velký vliv měla stabulace na obsah fenolů, kdy v ročníku 2022 bylo dosaženo nejvyššího obsahu celkových fenolů a antiradikálové aktivity ve 14denní variantě stabulace. 100bodovou stupnicí byla zvolena 3denní varianta jako nejlepší a 7denní varianta s nejlepším profilem.

Abstract:

The thesis was devoted to the topic of Stabulation of white wines. The literature part describes the composition of berries, must and lees. Aromatic and phenolic substances are described in more detail. Another part is devoted to the pre-fermentation treatments of must such as maceration, cold maceration and stabulation. In the experimental part, an experiment was carried out on the Hibernal variety of the 2021 and 2022 vintage. Wine was made from must that had been stabulated for 3, 7 and 14 days and a control without stabulation. Samples were taken from the must before and after stabulation and from the finished wine to analyze the basic parameters of wine, phenolic compounds content, antiradical activity and volatile compounds. The wines were also evaluated sensorially. The results showed the most significant increase in higher alcohols, specifically isoamyl alcohol, in the wine of the 2022 vintage, from 258.92 mg.l-1 (control) to 585.32 mg.l-1 (14 days). Stabilization had a great influence on the phenolic content, with the 2022 vintage having the highest total phenolic content and antiradical activity in the 14-day variant of stabilization. The 100-point scale selected the 3-day variant as the best and the 7-day variant as having the best profile.
