Determination of essential oil content by infrared (FT-NIR) spectroscopy

Abstract:

Bakalářská práce se v literární části věnuje použití kmínu kořenného jako koření, dále je zde popsán samotný kmín kořenný (Carum carvi L.), silice a vybrané metody ke stanovení obsahu silic. V experimentální části se práce věnuje stanovení čistoty, obsahu sušiny a hmotnosti tisíce semen u kmínu kořenného, dále stanovení silic a jejich složení. Při stanovení silic v kmínu kořenném se sleduje především množství silice v něm obsažené a procentuální zastoupení karvonu a limonenu. Stanovení silic bylo provedeno dvěma různými metodami. Blízkou infračervenou spektrofotometrií a referenční metodou destilací vodní parou s následnou analýzou složení silic pomocí plynové chromatografie. Z dosažených výsledků vyplývá, že mezi metodami stanovené obsahu silic nebyly zjištěny statisticky průkazné rozdíly. Obsah silic kmínu byl v rozmezí od 7,26 do 34,22 ml/kg. Práce upozorňuje na možnost využití rychlé nedestruktivní metody kvalitativních parametrů pomocí FT-NIR spektroskopie v oblasti potravinářství.

Abstract:

The bachelor thesis is devoted to the use of caraway root as a spice in the literature part, then the caraway itself (Carum carvi L.), essential oils and selected methods for the determination of essential oil content are described. The experimental part of the thesis deals with the determination of purity, dry matter content and weight per thousand seeds of caraway, as well as the determination of essential oils and their composition. In the determination of essential oils in caraway, the amount of essential oil contained and the percentage of carvone and limonene are monitored. The determination of essential oils was carried out by two different methods. Near-infrared spectrophotometry and a reference method by steam distillation followed by analysis of the essential oil composition by gas chromatography. The results obtained show that no statistically significant differences were found between the methods of determination of the essential oil content. The essential oil content of caraway ranged from 7.26 to 34.22 ml/kg. The work highlights the possibility of using a rapid non-destructive method of quality parameters by FT-NIR spectroscopy in the food industry.
