The Lean Canvas model of a specific restaurant

Abstract:

Diplomová práce představuje prostřednictvím Lean Canvas modelu projekt specifického restauračního zařízení, které bude zaměřeno ryze na nakládaný hermelín. Teoretická část práce se zaměřuje na vysvětlení základních pojmů týkajících se daného tématu a dále se zabývá vysvětlením pojmů v oblasti stravovacích služeb, konkrétně formami podnikání v pohostinství a teoretickým základem Lean Canvas modelu. Praktická část rozebírá provedený průzkum trhu jak na straně nabídky, tak i na straně poptávky a následně prostřednictvím Lean Canvas modelu představuje celý projekt. Cílem diplomové práce je nejen zobrazení uceleného přehledu o projektu hermelínového baru, ale také zhodnocení realizovatelnosti celého projektu a potvrzení myšlenky, zdali toto specifické restaurační zařízení se zaměřením na nakládaný hermelín má či nemá své místo na trhu. Výsledkem práce je prokázání veliké oblíbenosti nakládaného hermelínu jako pokrmu a hermelínový bar má tudíž své místo na trhu.

Abstract:

With the aid of the Lean Canvas project model, this thesis aims to presenta particular restaurant facility, which focuses exclusively on pickled hermelin.The theoretical part of the thesis focuses on an explanation of basic concepts related to the topic and subsequently seeks to explain pertinent established concepts in the field of catering services, namely the existing types of businesses within the field of hospitality and the theoretical basis of the Lean Canvas model.The practical section of this thesis analyzes the market research conducted both on supply and demand, and thereafter presents the entire project through the Lean Canvas model.The goal of this diploma thesis is not only to present a comprehensive overview of the hermelín restaurant facility, but also to evaluate the feasibility of the entire project and to explore the notionof whether or not this specific restaurant facility with a focus on pickled hermelin has its place on the market. The result of this endeavor is to demonstrate the great popularity of pickled hermelin as a food, and that the hermelín restaurant facility therefore has a place on the market.
