Homegrown vegetables: content of essential and toxic elements

Abstract:

Diplomová práce se zabývá problematikou obsahu esenciálních a toxických prvků v domácí zelenině. Teoretická část poskytuje informace o přínosech konzumace zeleniny, shrnuje motivace lidí k pěstování domácí zeleniny, poukazuje na rizika spojená s pěstováním potravin v kontaminovaných oblastech a hodnotí míru expozice toxickým prvkům prostřednictvím zeleniny. Praktická část přináší výsledky z analýzy obsahu prvků v zelenině z domácích zahrádek a z obchodních řetězců. Posuzuje nutriční význam zeleniny z hlediska obsahu esenciálních prvků. Hodnotí obsah toxických prvků v porovnání s legislativními limity a míru expozice toxickým prvkům z vybraných druhů zeleniny.

Abstract:

This diploma thesis deals with the issue of the content of essential and toxic elements in homegrown vegetables. The theoretical section provides information on the benefits of consuming vegetables, summarizes people's motivations for growing vegetables at home, points out the risks associated with growing food in contaminated areas and assesses the level of exposure to toxic elements in vegetables. The practical section presents results from the analysis of the content of elements in vegetables from home gardens and from commercial chains. It also assesses the nutritional quality of vegetables in terms of the content of essential elements. Furthermore, it evaluates the content of toxic elements in comparison with legislative limits and the level of exposure to toxic elements from selected types of vegetables.
