Analysis of food allergens
Abstract:
Táto bakalárska práca je zameraná na potravinové alergény a možnosti ich detekcie. V prvej časti práce sú uvedené základné charakteristiky o tom, čo je to alergia, príznaky potravinovej alergie a najčastejšie alergény podliehajúce legislatíve, ktoré sa vyskytujú v potrave. Druhá časť práce je venovaná diagnostike a samotnej detekcii potravinových alergénov.
Abstract:
This bachelor thesis is focused on allergens and possibilities of their detection. The basic characteristics of allergy, the symptoms of food allergy and the food allergens are described in the first part of this thesis. The second part is devoted to diagnostics and detection of food allergens.
