Abstract:

Pivní sektor je v dnešní době na startu velké transformace, která je poháněna měnícími se chutěmi spotřebitelů a rostoucím významem malých nezávislých pivovarů, často nazývaných minipivovary. Konkurenční prostředí mezi pivovary za posledních pár let rapidně vzrostlo a zákazníci si tak mohou vybírat z tisíce značek piv, což vytváří velkou výzvu zejména pro malé/řemeslné pivovary. Analýza obchodních modelů používaných pivovary během současného období popularity minipivovarů je zásadní pro pochopení trajektorie pivního průmyslu. Pro tuto analýzu, naplnění dílčích úkolů a řešení byly aplikovány metody SWOT, obchodního modelu Lean Canvas, dotazníkové šetření a rozhovorů, u kterých jsem sledovala nuanci od respondentů z dotazníkového řešení. Z těchto zjištěných dat vzešlo v patrnost, že minipivovary v zásadě obchodní modely nepoužívají, a proto byl navrhnut obchodní model Lean Canvas, který by měl být použitelný pro každý minipivovar v České republice a zajistit tak lepší postavení minipivovarů v pivním průmyslu. Limity práce byly nízké počty respondentů, které mohly zkreslit výsledek a nemožnost provádět výzkum opakovaně k zajištění objektivity tématu.

Abstract:

The beer sector today is at the start of a major transformation, driven by changing consumer tastes and the growing importance of small independent breweries, often called microbreweries. The competitive environment between breweries has increased rapidly over the last few years, giving consumers a choice of thousands of beer brands, creating a major challenge for small/craft brewers in particular. Analyzing the business models used by breweries during the current period of microbrewery popularity is essential to understanding the trajectory of the beer industry. For this analysis, fulfillment of sub-tasks and solutions, SWOT, Lean Canvas business model, questionnaire survey and interviews were applied where I observed nuance from the respondents from the questionnaire solution. From these findings, it was evident that microbreweries do not basically use business models, and therefore the Lean Canvas business model was proposed to be applicable to every microbrewery in the country and to ensure a better position of microbreweries in the beer industry. The limitations of the thesis were the low number of respondents which could have biased the result and the inability to conduct the research repeatedly to ensure objectivity of the topic.
