Abstract:
Bakalářská práce řeší problematiku výskytu dusičnanů v zelenině. Jsou popsány metody stanovení dusičnanů, vlivy kuchyňského zpracování zeleniny na obsah dusičnanů v potravinách. Část práce se věnuje rizikovosti dusičnanů pro lidský organismus. Jsou uvedeny osvědčené postupy, jimiž lze množství dusičnanů v zelenině ovlivnit. Abstract:
The bachelor thesis solves the problematic of nitrates occurrence in vegetables. It describes the methods of nitrates determination, effects cooking processes of vegetables on nitrates content within the food. Part of the work deals with the risks, that nitrates might have on the human organism. The proven procedures that have significant impact on the levels of nitrate in vegetables are also considered …more
