Comparison of practical final exams in the field of study Cook - Waiter

Abstract:

V bakalářské práci bude zpracováno téma závěrečných zkoušek učebního oboru Kuchař - číšník, se zaměřením na obsluhu. Hlavní cíl práce je komparace náročnosti závěrečných zkoušek, jejich hodnocení a úspěšnost žáků při jejich absolvování z pohledu učitele odborného výcviku, při jednotném zadání na Stření odborné škole a středním odborném učilišti Třešť v roce 2014. Cílem teoretické části je popsat a analyzovat jejich průběh, náročnost, hodnocení a odraz legislativních změn v roce 2014 u závěrečných zkoušek z pohledu učitelů odborného výcviku. Metodami pro zpracování teoretické části bude studium odborných literárních zdrojů, legislativy, charakteristiky uvedeného oboru, jeho analýza a následná syntéza informací získaných studiem těchto zdrojů. Dalším důležitým bodem bude komparace závěrečných zkoušek oboru Kuchař - číšník před a po roce 2014.V praktické části práce je cílem porovnat náročnost závěrečných zkoušek v důsledku zavedení jednotného zadání, jejich hodnocení a úspěšnost žáků při jejich absolvování z pohledu učitele odborného výcviku. K získání potřebných dat a in-formací bude použité průzkumné šetření založené na kvalitativním přístupu. Metodou sběru dat bude realizace polostrukturovaných hloubkových rozhovorů s odborně cílenou formulací otázek. Respondenty budou učitelé odborného výcviku uvedeného oboru. Data z rozhovoru budou analyzována s vyvozením vlastních závěrů. Následně chci demonstrovat pozitiva a případná negativa jednotlivých závěrečných zkoušek a zároveň posoudit zda zavedení jednotného zadání bylo přínosem na Střední odborné škole a středním odborném učilišti Třešť.

Abstract:

The topic of the final exams in the field of study Cook - Waiter, with a focus on service, will be elaborated in the bachelor's thesis.The main goal of the work is to compare the complexity of the final exams, their evaluation and the success of students in passing them from the view of a teacher of vocational training, in a united assignment at SOŠ a SOU Třešť in 2014.The aim of the theoretical part is to describe and analyse the course of the finals, complexity, evaluation and reflection of legislative changes in 2014 in the final exams from the perspective of vocational training teachers. The methods for processing the theoretical part will be the study of professional literary sources, legislation, characteristics of the branch, its analysis and subsequent synthesis of the information obtained by studying these sources. Another important point will be the comparison of the final exams in the field of Cook- Waiter before and after 2014.In the practical part of the work, the aim is to compare the complexity of the final exams as a result of the introduction of a uniform assignment, their evaluation and the success of students in completing them from the perspective of a teacher of vocational training. An exploratory survey based on a qualitative approach will be used to obtain the necessary data and information. The method of data collection will be the implementation of semi-structured in-depth interviews with professionally targeted formulation of questions. The respondents will be the teachers of vocational training in the field. The data from the interview will be analysed with the deducing of our own conclusions. Subsequently, I want to demonstrate the positives and some possible negatives of individual final exams and at the same time assess whether the introduction of a uniform assignment was a benefit at the SOŠ a SOU Třešť.
