Catering services provided in air transport

Abstract:

Tato bakalářská práce se zabývá charakteristikou provozu leteckého cateringu a analýzou jeho výkonů. Teoretická část obsahuje vysvětlení základních pojmů a zmiňuje nejdůležitější momenty v historii leteckého cateringu. Práce také objasňuje jednotlivé procesy provozu a porovnává cestovní třídy. Další nedílnou součástí je i pasáž věnující se bezpečnosti jídla a dílčím principům analýzy HACCP. Praktická část analyzuje provoz a nabídku letecké společnosti Emirates a hodnotí výsledky provedeného dotazníku, jehož cílem bylo zjistit pozici stravovacích služeb v zákaznickém rozhodování.

Abstract:

This bachelor thesis focuses on the characteristics of the airline catering's operation and the analysis of its performances. The theoretical part includes the explanation of basic terms and mentions the most important moments in the history of flight catering. The thesis also illustrates the individual operation's processes and compares flight classes. Another integral part is the passage devoted to food safety and HACCP principles. The practical part analyses the catering operations and the offer of Emirates airlines and also evaluates the results of questionnaire which was made to find out the position of catering services in customer's travel decision.
