Antioxidant activity of fruits: organic vs. conventional farming system

Abstract:

Práce se soustředí na porovnání antioxidační aktivity rybízů, angreštů, třešní a jablek pocházejícího z ekologického a konvenčního zemědělství. Popisuje rozdíly mezi jednotlivými typy zemědělství a jejich vliv na tvorbu a akumulaci látek s antioxidační aktivitou v ovoci. Dále se práce zabývá problematikou hodnocení antioxidační aktivity, primárně průtokovou injekční analýzou s elektrochemickou detekcí.

Abstract:

This paper focuses on the comparison of the antioxidant activity of currants, gooseberries, cherries, and apples from organic and conventional agriculture. It describes the differences between the farming systems and their influence on the formation and accumulation of compounds with antioxidant activity in fruit. Furthermore, the work concentrates on the evaluation of antioxidant activity, primarily by flow injection analysis with electrochemical detection.
