Educational map for children with food allergies and intolerances

Abstract:

Úvod: Nežádoucí reakce na potraviny, kterými jsou diagnózy potravinových alergií a intolerancí, trápí značné procento dospělé i pediatrické populace. Edukace je při těchto onemocněních základem pro jejich zvládání bez nepříjemných až život ohrožujících příznaků. Navzdory tomu je edukace pacientů a jejich rodinných příslušníků po sdělení diagnózy nevyhovující a nedostatečná. Cíl: Hlavním cílem práce je navržení a vytvoření přehledné a interaktivní edukační mapy pro dětské pacienty s diagnózou potravinové alergie nebo intolerance. Dílčím cílem je ověřit její přehlednost a aplikovatelnost u dětí s Potravinovými alergiemi a intolerancemi. V rámci dalšího dílčího cíle práce mapuje míru a dostatečnost edukace zákonných zástupců/opatrovatelů dětí s těmito nemocemi za pomocí dotazníkového průzkumu. Metodika: Prvotně bylo provedeno kvantitativní šetření, které prostřednictvím nestandardizovaného dotazníku vlastní konstrukce ověřilo edukační potřebu u dotazovaných zákonných zástupců dětí s Potravinovou alergií a intolerancí. V návaznosti na tyto výsledky a teoretické poznatky byla vytvořena interaktivní edukační mapa a kvalitativním průzkumem byla ověřena její přehlednost a aplikovatelnost. Výsledky: Z dotazníkového šetření vyplývá, že míra edukace zákonných zástupců dětí s těmito onemocněními je nedostatečná. Z celkového počtu 127 respondentů se 47 % (60) domnívá, že v rámci edukace nejsou dostatečně informovaní po diagnostikování tohoto onemocnění u svého dítěte. Ze všech zdravotnických profesí byla první edukace vedena převážně lékařem, což uvedlo 54 % (68), ovšem 37 % (47) odpovědělo, že je nikdo needukoval o dietním a režimovém opatření. Nejčastější forma edukace od zdravotnických pracovníků ohledně dietních a režimových opatření proběhla slovní metodou, grafické edukační materiály byly využity u 16 % (25) a písemné u 15 % (22). Následně si informace nejčastěji doplňují na internetu, jak uvedlo 30 % (110) a také na sociálních sítích u 29 % (104). Respondenti by zároveň by ocenili přehledný, jednoduchý a interaktivní edukační materiál. Pro děti s potravinovou alergií a intolerancí v předškolním a školním věku to uvedlo 94 % (119) účastníků šetření a 96 % (122) z nich by uvítalo takový materiál pro ně jako rodinného příslušníka. Na základě osobních intervencí s dětmi (za přítomnosti zákonného zástupce, či opatrovníka) při práci s edukační mapou a jejich hodnocení formou "smajlíkové" škály bylo prokázáno, že je pro ně edukační mapa přehledná, srozumitelná a svým grafickým zpracováním účelná. Závěr: Edukaci u potravinových alergií a intolerancí není žádoucí zanedbat, jelikož dietní a režimová opatření bývá jedinou možnou léčebnou metodou pro tyto pacienty. Použití edukační mapy a dalších grafických materiálů může edukační proces zlepšit a posílit zejména u dětí i jejich zákonných zástupců, či jiných opatrovníků a je také vhodný k reedukaci v domácím prostředí.

Abstract:

Introduction: Adverse food reactions, which are diagnosed as food allergies and intolerances, plague a significant percentage of the adult and pediatric population. Education is essential in managing these conditions without unpleasant or even life-threatening symptoms. Despite this, education of patients and their family members after diagnosis is inadequate and insufficient. Aim: The main aim of this study is to design and create a clear and interactive educational map for pediatric patients diagnosed with food allergy or intolerance. A sub-objective is to test its clarity and applicability to children with Food Allergies and Intolerances. As another sub-objective, the thesis maps the extent and sufficiency of education of legal representatives/guardians of children with these diseases using a questionnaire survey. Methodology: Initially, a quantitative survey was conducted to ascertain the educational need of the interviewed legal guardians of children with Food Allergy and Intolerance through a non-standardized questionnaire of own design. Following these results and theoretical findings, an interactive educational map was created and its clarity and applicability was verified by a qualitative survey. Results: Out of 127 respondents, 47 % (60) believe that they are not sufficiently informed in education after their child is diagnosed with this disease. Among all health professions, the first education was mostly conducted by a doctor, which was reported by 54 % (68), however, 37 % (47) responded that they were not taught about diet and regimen. The most common form of education from health professionals on diet and regimen measures was verbal method, while graphic educational materials were used in 16 % (25) and written materials in 15 % (22). Subsequently, the most frequent way to supplement information was on the internet as reported by 30 % (110) and also on social media at 29 % (104). Respondents would also appreciate clear, simple and interactive educational material. For children with food allergies and intolerances at pre-school and school age, 94 % (119) of the participants stated this and 96 % (122) of them would welcome such material for them as a family member. On the basis of personal interventions with children (in the presence of a legal representative or guardian) while working with the educational map and their evaluation in the form of a "smiley face" scale, it was shown that the educational map is clear, understandable and effective in its graphic design. Conclusion: The use of educational maps and other graphic materials can improve and strengthen the educational process, especially for children and their legal representatives or other guardians, and is also suitable for re-education in the home environment.
