Innovation of supply of the Stein hotel

Abstract:

Cílem diplomové práce je zhodnotit současné trendy v hotelu z hlediska podnikového managementu a navrhnout přípravu a následně efektivnější využívání manuálů s ohledem na zdokonalení činností v hotelu Stein. První část diplomové práce je zaměřena na vysvětlení základních pojmů cestovního ruchu a hotelnictví. Pozornost je věnována inovačním procesům na trzích cestovního ruchu a ubytovacích služeb. Dále je pojednáno o kvalitě poskytovaných služeb a jejím ověřování pomocí dotazníků spokojenosti a mystery shoppingem, aby hotel opouštěl spokojený zákazník – tzv. satisfied leaving client. S tím souvisí i firemní kultura, soubor psaných i nepsaných pravidel, která stanovují základní rámec chování a jednání všech pracovníků hotelu k hostům. Analytická část této práce se zabývá inovací služeb v hotelu Stein. Hotel Stein je představen z hlediska lokality, historie i poskytovaných služeb. Je popsán přístup managementu hotelu k inovacím v nabídce. V analytické části se práce dále zaměřuje na analýzu stávajících zákazníků, okolního prostředí a v neposlední řadě na analýzu konkurence jak v České republice, tak v Německu. Analýza zákazníků byla zpracována na základě primárního průzkumu prostřednictvím dotazníkového šetření přímo v hotelu. Je zde provedena segmentace trhu, která pomůže managementu hotelu poznat své hosty a připravit pro ně balíčky služeb, o které budou mít zájem. Jsou zde uvedeny ekonomické výsledky hotelu, SWOT analýza a zhodnocení kvality služeb na základě realizovaného mystery shoppingu. V návrhové části jsou nastíněna doporučení ke zlepšení současného stavu - návrhy inovací procesů, služeb a produktů hotelu Stein, a je rovněž provedena analýza rizik. Na základě zjištěných okolností z proběhlého mystery shoppingu je zde navržen soubor opatření na zlepšení nabízených služeb.

Abstract:

Goal of this Master’s Thesis is to evaluate current trends in a hotel form the perspective of organizational management and propose a preparation and effective usage of process description manuals in order to improve the processes in hotel Stein. First part of the Thesis is oriented to explain the general terms in tourism and hotel services. The focus is on the innovation processes within the defined industry. Further, the thesis is discussing the quality of the offered services and verification thereof via answer sheets and mystery shopping, so the hotel has satisfied leaving client. This is connected to organizational culture, explicit and implicit guidelines, which do prescribe the general framework of conduct and behavior of all employees of the hotel toward the client. The Analytic part of the thesis is dealing with innovations of services at hotel Stein. Hotel Stein is introduced in the context of the geographical location, history and services offered. Description of management policy toward the innovation of the offerings is made. This part is further dealing with analysis of the current customer base, the external environment and last but not least with analysis of competition in Czech Republic as well in Germany. Customer analysis has been drawn from a primary research with answer sheets provided directly at the hotel. Further, market segmentation has been made, which should help management to learn more about their guests and prepare packages that will be interesting for the groups defined. Also economical data has been presented, SWOT analysis and evaluation of quality of services based upon the mystery shopping realized. In the proposition part, recommendations are made to improve the current situation – concepts of innovation of processes, services and products of hotel Stein and also risk analysis is being presented. Based on the findings of the mystery shopping a set of proceedings is proposed to improve the offered services.
