Abstract:

Cílem práce je představit roli čaje v japonské kultuře a prozkoumat možnosti kombinace čaje s japonskými pokrmy. Teoretická a metodologická část byla zaměřena na představení významu čaje v japonské kultuře, což zahrnuje čajové obřady, historii čaje, nejoblíbenější druhy čaje a poznatky o japonské kuchyni. Stručně byl popsán také princip párování chutí a způsoby degustace čaje. V druhé analytické části bylo cílem zjistit přístup spotřebitelů k párování čaje s jídlem obecně a zejména s japonskou kuchyní prostřednictvím online dotazníku, dále pak zjistit, jak spotřebitelé reagují na kongruentní a kontrastní metody párování, a to vytvořením senzorického experimentu pro sběr dat.

The aim of the thesis is to introduce the role of tea in Japanese culture and explore the possibilities of combining tea with Japanese dishes. The theoretical and methodological part was focused on introducing the importance of tea in Japanese culture, which includes tea ceremonials, the history of the tea, the most popular types of tea, and knowledge about Japanese cuisine. Also, the principle of flavor pairing and methods of degustating tea was briefly described. In the second analytical part, the aim was to find out an approach of consumers to tea pairing with food in general and in particular with Japanese cuisine via an online questionnaire, then to find out how consumers react to congruent and contrast pairing methods by creating a sensorial experiment to collect data.
