Práca sa zaoberá riadením alergénov v potravinárstve aich významom v potravinovom reťazci. Keďže prevalencia a závažnosť ochorení stále narastá, má to vplyv na potravinársky priemysel a taktiež na spotrebiteľa, ktorý má právo dozvedieť sa o výrobku čo najviac na základe deklarovaného zloženia na jeho obale.
