Abstract:
Oat (Avena sativa L.) is a grain crop from the Poaceae family. Its popularity in human consumption has recorded an increasing trend thanks to the high content of beneficial substances. Oats are also rich in proteins; however, oat prolamins – avenins might be considered as a trigger of toxic effects for patients having celiac disease (CD).
