Polyphenol composition of wine and possibilities of its influencing

Abstract:

Tato bakalářská práce se zabývá polyfenolickým složením vína. Popisuje, do jakých skupin se fenolické látky rozdělují a stručně jednotlivé fenoly charakterizuje. V další části se práce zabývá enologickými operacemi, jenž ovlivňují obsah polyfenolů ve víně. Každá z těchto operací obsahuje souhrnný popis a princip, co při výrobě vína způsobuje. Jsou zde popsány různé způsoby macerace, vliv kyslíku a dřeva, a to ve formě sudů a dřevěných štěpek. V poslední části se práce zabývá odpadem ve vinařství (semena, slupky a třapiny), který je velmi bohatý na fenolické sloučeniny.

Abstract:

This bachelor thesis deals with the polyphenolic composition of wine. It describes the groups into which phenolic substances are divided and briefly characterizes the individual phenols. The next part deals with oenological operations that affect the content of polyphenols in wine. Each of these operations contains a summary description and principle, what it causes in wine production. There are described various methods of maceration, the effect of oxygen and wood, in the form of barrels and wooden chips. In the last part, the work deals with waste in wine production (seeds, husks and stems), which is very rich in phenolic compounds.
