Abstract:

Diplomová práce se zabývá gastronomickým konceptem zaměřeným na rozšíření nabídky služeb o další aktivity. V úvodu popisuje hlavní cíle a motivace včetně použitých metodik pro zpracování diplomové práce. Cílem práce je najít nejlepší způsob rozvoje našeho podnikání na základě poznatků z dotazníkového šetření. Pro předloženou diplomovou práci bylo použito následujících metodik: dotazníkové šetření, cílené rozhovory s hosty podniků, analýzu vyhodnocení dat, deskripci a klasifikaci. Byly stanoveny čtyři hypotézy, které jsou vyhodnoceny v závěru práce. Práce vysvětluje základní pojmy z historie gastronomie a plynule přechází k současným trendům a jejich významu ve světové gastronomii. Popisuje historii rybářství a rybníkářství, uvádí nové trendy spojené s prací na rybnících. Dále vystihuje nové technologické postupy týkající se chovu ryb. Zabývá se celosvětovou produkcí ryb a dalšího zpracování včetně exportu a importu. Hodnotí rybu jako nezastupitelný zdroj potravy, oceňuje rybí produkty z hlediska významu a obsahu bílkovin, tuků, vitamínů, minerálních látek a dusíkatých nebílkovinných složek. Klasifikuje rybí maso jako nepostradatelný zdroj zdraví prospěšných látek. Přechází na kvalitu rybího masa až po samotné hodnocení jakosti a významu sladkovodních ryb. Vysvětluje konzumentům, jak rozeznat kvalitativní hodnoty rybího masa. Vtahuje čtenáře přímo do místa děje všech rybářských tradic a zvyklostí. Představuje Třeboň a Třeboňsko jako kolébku rybníkářství evropského významu. Popisuje základní tři pilíře našeho podnikání, které jsou tvořeny restaurací Šupina a Šupinka, Apartmány Šupina a pojízdnou prodejnou. Teoretické poznatky byly využity a následně v praxi ověřeny na základě provedeného vlastního výzkumu pomocí dotazníkového šetření. Výsledky práce rozhodně přispějí ke zkvalitnění a hlavně rozvoji služeb. Celkem ze čtyř stanovených hypotéz byly dvě potvrzeny a dvě vyvráceny.

Abstract:

The diploma thesis deals with a gastronomic concept aimed at widening the offer of services with some other activities. In the introductory part, the main goals and motivation including the used methodologies for writing the diploma thesis are described. The aim of the thesis is to find the best way to develop our business following the findings of a questionnaire investigation. As for the submitted diploma thesis, the following methodologies were used: questionnaire investigation, targeted interviews with guests of the facility, analysis of the data assessment, description and classification. Four hypotheses evaluated in the final part of the thesis have been defined. The thesis provides explanations of the key terms of the history of gastronomy and it smoothly changes to the current trends and their significance for the world gastronomy. It describes the history of fishing and pond culture; new trends related to work on ponds are introduced. Further, it outlines new technological approaches to fish farming. It deals with the worldwide fish production and further processing including export and import. It appraises fish as an irreplaceable source of food; fish products are appreciated in terms of significance and content of protein, fat, vitamins, minerals and nitrogen non-protein components. Fish meat is classified as an essential source of substances beneficial to health. Quality of fish meat and the proper evaluation of the quality and significance of freshwater fishes follow. It is explained to consumers how to recognize qualitative values of fish meat. It drags the reader directly into the scene of action of all fishing traditions and habits. It portrays Třeboň and the region of Třeboň as a cradle of the pond culture of European significance. Three key pillars of our business consisting of the Šupina and Šupinka restaurants, the Šupina suites and a mobile shop are described. The theoretical findings have been used and then verified in practice based on the proper research carried out by means of a questionnaire investigation. The findings of the thesis will definitely contribute to the improvement of the quality of and, especially, to the development of the services. Two of the four hypotheses defined have been confirmed and two have been disproved.
