Possible Substitutes NaCl in Meat Products
Abstract:
Bakalářská práce se zabývá chemickým složením masa, masných výrobků a jejich technologickými vlastnostmi. Především se zabývá aplikací chloridu sodného v masné výrobě, zdravotními aspekty vyplývající z nadměrného příjmu sodíku a možnostmi jeho náhrady v masné výrobě.
Abstract:
Bachelor thesis is focus on the chemical composition of meat, meat products and their technological properties. It especially studies the application of a sodium chloride in the meat production, medical aspects resulting from high income of sodium and the options of its substitution in the meat production.
