Use of cross-flow filters in winemaking

Abstract:

Tato bakalářská práce se zabývala problematikou stabilizace a filtrace vína. Zaměřili jsme se na výhody a nevýhody daných postupů při výrobě vína a jednotlivých prostředků k jejich uskutečnění. Závěr práce je věnován tématice cross-flow filtrů a jejich dostupnosti na českém trhu. Bylo zjištěno, že stabili-zace vína je důležitá pracovní operace, pro kterou v dnešní době existuje spoustu přípravků a zařízení. Filtrace zajišťuje jiskrnost, ale i mikrobiální stabilitu vína, která je dosažená v případě použití sterilní filtrace. V závěru práce je pozornost věnována čtyřem typům cross-flow filtrů dostupných na českém trhu a jejich využití ve vinařských provozech.

Abstract:

This undergraduate thesis deal with the issue of wine stabilization and filtrati-on. We focused on the advantages and disadvantages of the given wine ma-king processes and the different means to implement them. The thesis conc-ludes with the topic of cross-flow filters and their availability on the Czech market. It has been found that wine stabilizationn is an important operation for which there are nowadays a lot of preparations and equipment. Filtration en-sure the sparkle but also microbal stability of wine, which is achieved in case of using sterile filtration. At the end of the thesis, attention is paid to four ty-pes of cross-filters available on the Czech market and their use in wineries.
