Physico-chemical Characteristics of Still Wines

Abstract:

Diplomová práce se zabývá stanovením fyzikálně-chemických charakteristik tichých vín dle metod Mezinárodní organizace pro révu a víno (OIV). Teoretická část popisuje révu vinnou jako hlavní surovinu pro výrobu vína, vinařské oblasti Čech a Moravy a na nich pěstované odrůdy, technologii výroby vína a fyzikálně-chemické vlastnosti tichých vín. Praktická část zahrnuje specifikaci vzorků tichých vín a popis principů a postupů stanovení jednotlivých metod pro určení fyzikálně-chemických charakteristik bílých, růžových a červených vín. U těchto vín byla stanovena hustota, veškeré titrovatelné kyseliny, pH, polyfenoly, antokyany, barevná intenzita a odstín červených vín, volný a veškerý oxid siřičitý a trichromatické charakteristiky. V této části jsou rovněž prezentovány dosažené výsledky společně s diskuzí.

Abstract:

The diploma thesis deals with the determination of physicochemical properties of still wines according to methods of the Organisation of Vine and Wine (OIV). The theoretical part describes vine as a major raw material for wine producing, introduces the main wine-growing region of Bohemia and Moravia and types of wine grapes cultivated there, and finally describes wine production technology and physicochemical properties of still wines. The practical part of this diploma thesis specifies the samples of still wines, describes principles and procedures that help to choose the individual methods for determination of physicochemical properties of white, rose and red wines. For these types of wines was determined the density, titratable acids, pH, polyphenols, anthocyanins, color intensity and shade of red wines, free and all sulfur dioxide, trichromatic characteristics. This part also includes achieved results and discussion.
