Investigation of interactions between some food dyes and copper(II) using UV/Vis spectrophotometry

Abstract:

V této diplomové práci byly zkoumány interakce mezi potravinářskými azobarvivy a měďnatými ionty s využitím UV/Vis spektrofotometrie. Pro studium byla vybrána čtyři barviva, a to amarant, azorubin, potravinářská žluť 3 (Sunset Yellow) a tartrazin. Byly dokázány interakce mezi barvivy a ionty mědi. V přítomnosti iontů mědi byl ve spektrech barviv pozorován hypsochromní posun i hypochromní efekt. Pro každé barvivo byl spektrofotometricky dokázán jenom jeden typ komplexu. Poměry barvivo: měď (II) v komplexech byly určeny metodou proložení přímkou. Stechiometrie ve všech komplexech byla 2 : 1 (barvivo: měď). Za předpokladu platnosti Lambert-Beerova zákona byly vypočteny molární absorpční koeficienty komplexů. Hodnoty koeficientů jsou následující [dm3.cm-1.mol-1]: 30 740 (komplex amarantu), 20 301 (komplex azorubinu), 32 333 (komplex potravinářské žlutě 3) a 43 665 (komplex tartrazinu).

Abstract:

In this diploma work, interactions between some food azo dyes and cupric ions were examined using UV/Vis spectrophotometry. Four synthetic food dyes were chosen. These are Amaranth, Azorubine, Sunset Yellow and Tartrazine. Chemical interaction between dyes and cupric ions was found. In the presence of cupric ions, hypsochromic shift and hypochromic effect were observed in the spectra of these dyes. Spectrophotometric method was identified only one complex species for each dye. The dye: copper (II) ratio in complexes was determined by means of "straight-line" method. The results showed that stoichiometric ratio all of the dyes to cupric ions was 2 : 1. Following Lambert-Beer law were also calculated molar absorption coefficients of complexes. Values are as follows [dm3.cm-1.mol-1]: 30,740 (complex of Amaranth); 20,301 (complex of Azorubine); 32,333 (complex of Sunset Yellow) and 43,665 (complex of Tartrazine).
