Abstract:
Hlavním tématem diplomové práce je analýza biogenních aminů ve vzorcích archivních vín, doplněná o chemický rozbor základních složek vín a senzorickou analýzu. K analýzám byly použity vzorky archivních vín v tematických řadách podle jednotlivých ročníků, dva druhy bílého vína a dva druhy červeného vína z mikulovské vinařské podoblasti. Abstract:
The main theme of this thesis is the analysis of biogenic amines in samples of wines, complemented by chemical analysis of the basic ingredients and wine sensory analysis. Archival samples were used in the thematic series of wines by vintage for the analysis, two kinds of white wine and two kinds of red wine from the Mikulov wine-growing region were used.
