Diplomová práce se zabývá fyzikálně-chemickou analýzou pšeničného müsli. V teoretické části jsou shrnuty druhy pšenice a její chemické složení. Podstatná část teorie je zaměřena na pšeničné müsli, jeho výrobu, známé druhy a složení. Dále je v práci charakterizována stravitelnost a antioxidační aktivita obilovin. Abstract:
This diploma thesis is focused on a physico-chemical analysis of non-traditional wheat and muesli products. The theoretical part includes a description of types and chemical composi-tion of wheat grains. Fundamental part of this theory is focused on wheat muesli, its pro-duction, varieties and composition.
