Chocolates with an increased content of health beneficial substances

Abstract:

Diplomová práce na téma Čokolády se zvýšeným obsahem zdraví prospěšných látek byla vypracována v letech 2018 až 2020 na Ústavu posklizňové technologie zahradnických produktů na Zahradnické fakultě Mendelovy univerzity v Brně. Práce se skládá z literární části, kde jsou popsané legislativní nároky na čokoládu a čokoládové produkty, historie čokolády, popis výroby čokolády a popis některých zdraví prospěšných látek, které jsou rozděleny na minerální látky, vitamíny a antioxidanty. Experimentální část zahrnuje výrobu variant ochucených čokolád se zvýšeným obsahem zdraví prospěšných látek. Použitý rostlinný materiál byly, barikové dřevo, čaj matcha, červené zelí, kurkuma, černý pepř, zázvor, červené víno, chmel, rozmarýn, žampiony a acai berry. Jsou vyhodnoceny jejich antioxidační kapacity, jejich senzorických vlastnosti a konzumní přijatelnost.

Abstract:

The diploma thesis on the subject of Chocolates with an increased content of health beneficial substances was elaborated in the years 2018 to 2020 at the Institute of Postharvest Technology of Horticultural Products at the Faculty of Horticulture at the Mendel University in Brno. The work consists of a literary part, which includes the legislative requirements for chocolate and chocolates products, the history of chocolate, a description of some health beneficia substances, which are divided into minerals, vitamins and antioxidants. The experimental part includes a production of variants of flavored chocolates with an increased content of healthy substances. The plant material that was used is barrique wood, matcha tea, red cabbage, turmeric, black pepper, ginger, red wine, hops, rosemary, mushrooms and acai berry. Their antioxidant capacity, their sensory properties and consumer acceptability are evaluated.
