Is margarine consumption a health risk ?

Abstract:

Abstract: V roce 2008 začal kolovat a nadále se šíří prostřednictvím médií (např. internetu, denního tisku, televize) poplašný článek s návem „Margaríny jako zdravotní riziko (Rama s nama)“. Tato práce je, kromě jiného, reakcí na uvedený poplašný článek, který poskytuje zavádějící informace o výrobě margarínů a dopadu jejich konzumace na zdraví spotřebitele. V teoretické části je nejdříve vymezen pojem „margarín“ a poté je zjišťováno množství jeho spotřeby v České republice. Dále je uveden přehled historického vývoje této potraviny, výroba margarínů, tedy z jakých surovin a jakým způsobem se margaríny vyrábějí, ale také jaké změny jeho výrobu provázejí. Pozornost je následně zaměřena na samotné výrobky s doporučením, podle kterého si lze vybrat správný výrobek, nejlépe vyhovující daným doporučením. Jelikož byl zmiňovaný článek zaměřen také na transmastné kyseliny, je jim v této práci věnována samostatná kapitola. Práce je dále zaměřena na vztah mastných kyseliny margarínů k cholesterolu. Praktická část práce zjišťuje, jaká je skutečná spotřeba a obliba margarínů a zda mediální „bouře“, která se jich týká, ovlivnila u vybraného vzorku dospělé populace znalosti o margarínech a postoj k nim.

Abstract: An alarming article “Margarine as a health risk” (Rama with us) started to circulate and spread across the media e.g. internet, journals and television in the year 2008. This thesis is among other things such as the reactions given on the mentioned article, which is proclaimed to have misleading information about the production and the influence on the health of consumers and their consumption. In the theoretical part of this thesis is first determined a term being “margarine” and then there is the detection amount of consumption of it in Czech Republic. There is also an historical summary on margarine’s development – production of margarines, commodities used, what kind of process is used and how it has changed during its lifetime. An addtional focus in this thesis is on recomemdations given about and on the product itself, they are used as a guide in choosing the right product (margarine) which is most suited to recomendation. There is also a chapter on trans fatty acids, which were mentioned specically in the alarming article itself. The thesis is then further focused on the relationship of trans fatty acids in margarines toward cholestrol. The practical part of this thesis investigates the consumption and popularity of margarines. Also investigates, if the medial „storm“ about margarines has influenced the knowledge in margarines and the positioning of the adult population toward margarines.
