Abstract:
Práce je věnována použití dusitanů v masných výrobcích jako aditivních látek. Zabývá se působením dusitanů na masný výrobek i na lidský organismus. Praktická část se věnuje stanovení dusitanů ve vybraných vzorcích suchých salámů.
Abstract:
The use of nitrites in meat products such as additives is discussed in this work. The effects of nitrite on the stability of meat products as well as on the human health are described. In the experiment, the determination of nitrite in selected samples of dry salami was performed.
