Sustainability in the hospitality and gastronomy industry

Abstract:

The topic of the bachelor thesis is Sustainability in the hospitality and gastronomy industry. In my thesis I focus on the issue of sustainability and its importance in the hospitailty and gastronomy. The topic of sustainability is becoming more and more important to the population and also plays an important role in the hospitality and gastronomy. Habits such as recycling, reusing objects or materials are natural for people nowadays. Despite the growing awareness of sustainability, there is a need to highlight its importance in more detail and to examine people's behaviour in hospitality and gastronomy individually. The aim of the bachelor thesis is to evaluate the current state of the use of sustainability and "Green Management" principles in selected three-star and four-star hotels located in the city of Trnava and to suggest improvements. In the theoretical part of the bachelor thesis I deal with the theoretical definition of concepts such as sustainability, sustainability principles and "Green management" principles in the hospitality and gastronomy industry. It also includes the characteristics of the ecohotel and its certification. The second analytical part describes the eco-hotel Dalia and its sustainability principles. Furthermore, in the analytical part I describe the results of the questionnaire survey, which are shown in tables and graphs. The questionnaire survey was applied to selected hotels located in the city of Trnava. In the last part of the proposal, I suggest possibilities that could improve the rate of use of "Green management" measures in the hotels of the city of Trnava and thus ensure the reduction of negative environmental impacts.

Abstract:

Téma bakalárskej práce je udržateľnosť v hotelierstve a gastronómii. V práci sa zameriavam na problematiku udržateľnosti a jej významu v odbore hotelierstva a gastronómie. Téma udržateľnosť sa stáva čoraz viac dôležitejšou pre populáciu a takisto zohráva dôležitú úlohu v hotelierstve a v gastronómii. Návyky ako recyklácia, opätovné využitie predmetov alebo materiálov sú pre ľudí v dnešnej dobe už prirodzené. Aj napriek stúpajúcom povedomí o udržateľnosti je potrebné detailnejšie poukazovať na jej dôležitosť a jednotlivo skúmať správanie ľudí v zariadeniach poskytujúcich služby v oblasti hotelierstva a gastronómie. Cieľom bakalárskej práce je zhodnotiť súčasný stav využívania princípov udržateľnosti a „Green managementu” v trojhviezdičkových a štvorhviezdičkových hoteloch nachádzajúcich sa v meste Trnava a navrhnúť ich zlepšenia. V teoretickej časti bakalárskej práce sa zaoberám teoretickým vymedzením pojmov ako je udržateľnosť, princípy udržateľnosti a princípy „Green managementu” v hotelierstve a gastronómii. Súčasťou tejto časti je aj charakteristika ekohotelu a jeho certifikácie. Druhá analytická časť stručne popisuje ekologický hotel Dália a jeho princípy udržateľnosti. Ďalej v analytickej časti popisujem výsledky dotazníkového šetrenia, ktoré sú znázornené v tabuľkách a grafoch. Dotazníkové šetrenie bolo aplikované do vybraných hotelov nachádzajúcich sa v meste Trnava. V poslednej návrhovej časti navrhujem možnosti, ktoré by mohli zlepšiť mieru využivania opatrení „Green managementu” v hoteloch mesta Trnava a zabezpečiť tak zníženie negatívnych vplyvov na životné prostredie.
