Anotácia:

Tato práce byla napsána, aby vzbudila zájem o koření nejen u čtenáře, který má daleko od profesionálního vaření, ale možná i u těch, kteří jsou přímo spojeni s gastronomií. Autor by si přál, aby se čtenáři dívali na koření a byliny přes hranol povědomí, aby se stali kompetentnějšími o jejich používání. Primárním cílem této práce je zjistit vliv historicky formované migrace koření na jejich integraci do gastronomie. Sekundárním cílem této práce je zjistit význam použití koření pro lidské zdraví. Pro správnou tvorbu a zveřejnění tématu uvede autor práci ve 3 částech. Teoretická část je hlavní částí autorova uvažování a recenze odborné literatury, která vám řekne, jakou cestou transformace koření prošla od „symbolu“ luxusu a prosperity k jejich správnému a skutečnému účelu; jak integrace koření formovala tradiční kuchyně; jak migrace koření otevřela nové vyhlídky na rozvoj kulinářství a gastronomie v různých zemích i na studium jejich užitečných vlastností bez ohledu na jejich národní příslušnost. V druhé (analytické části práce) se autor pomocí různých metod pokusí potvrdit teoreticky uvedený materiál; vysvětlit význam studia podstaty koření, jejich základních vlastností, kombinace; odhalí pravidla a rozsah jejich aplikace a účasti na vaření jako umění. V závěrečné části své práce autor shrne a navrhne některá pravidla pro práci s kořením, jejich kombinace, na základě zkušeností profesionálů i jeho vlastních.

Abstract:

This work was written to arouse interest in spices not only for the reader, who is far from professional cooking, but perhaps also for those who are directly connected with gastronomy. The author would like readers to look at spices and herbs through the prism of awareness in order to become more competent about their use. The primary aim of this work is to determine the influence of historically formed migration of spices on their integration into the gastronomy. The secondary aim of this work is to identify the relevance of the use of spices for human health. For the correct formation and disclosure of the topic, the author will present the work in 3 parts. The theoretical part is the main part of the author's reasoning and a review of special literature, which will tell you what path of transformation spices have gone from the "symbol" of luxury and prosperity to their correct and true purpose; how the integration of spices has shaped traditional cuisines; how the migration of spices opened up new prospects for the development of culinary and gastronomy in different countries, as well as for the study of their useful properties, regardless of their national affiliation. In the second (analytical part of the work), using various methods, the author will try to confirm the theoretically stated material; explain the importance of studying the essence of spices, their basic properties, combination; will reveal the rules and scope of their application and participation in cooking as an art. In the final part of his work, the author will summarize and suggest some rules for working with spices, their combinations, based on the experience of professionals and his own.
