V diplomové práci jsem se zabývala vlivem času při hydrolýze kvasničné biomasy vznikající při výrobě piva na velikost hydrolyzovaných molekul. Hydrolýza byla prováděna kyselou cestou. Teoretická část popisuje základní chromatografické metody, principy gelové permeační chromatografie (GPC, SEC) a základní principy hydrolýzy. Abstract:
In the master thesis, I looked at the influence of hydrolysis time on yeast biomass produced in the brewing on the size of hydrolysed molecules. Hydrolysis was carried out by acid. The theoretical part describes the basic chromatographic methods, principles of gel permeation chromatography (GPC, SEC) and the basic principles of hydrolysis.
