Meat performance parameters in abrdeen bulls angus in fattening

Abstract:

Cílem bakalářské práce bylo zhodnotit parametry masné užitkovosti u býku plemene aberdeen angus ve výkrmu. Za tímto účelem bylo provedeno sledování v konkrétním chovu – statek Rantířov. Předmětem sledování byli býci plemene aberdeen angus ve výkrmu v období leden 2022 až prosinec 2023. Do sledování byli zařazeni býci, u kterých byly zjištěny všechny parametry masné užitkovosti. Celkem bylo vyhodnoceno 23 býků. Mezi parametry masné užitkovosti byly zahrnuty: hmotnost při narození (kg), porážková hmotnost (kg), věk v době porážky (dny), absolutní přírůstek (kg), průměrný denní přírůstek (kg), hmotnost JUT (kg), výtěžnost (%), zmasilost (S, E, U, R, O, P) a protučnění (1, 2, 3, 4, 5). Na základě zjištěných výsledků parametrů masné užitkovosti lze konstatovat, že průměrná hmotnost při narození byla 39,3 kg, porážková hmotnost 764,1 kg, absolutní přírůstek 724,8 kg, věk v době porážky 638,5 dnů, průměrný denní přírůstek 1,14 kg, výtěžnost 54,4 %, hmotnost JUT (jatečně upraveného těla) 415,6 kg, zmasilost 3,7 a protučnění 3,3.

Abstract:

The aim of the bachelor's thesis was to evaluate the parameters of meat yield of Aberdeen Angus bulls during fattening. For this purpose, a monitoring was conducted at a farm in Rantířov. The subjects of the monitoring were Aberdeen Angus bulls in fattening in the period between January 2022 and December 2023. In total, 23 bulls were evaluated. The meat yield parameters whiche were included: birth weight (kg), slaughter weight (kg), age at slaughter (days), absolute growth (kg), average daily growth (kg), dressed carcass weight (kg), yield percentage (%), conformation (S, E, U, R, O, P) and fatness (1, 2, 3, 4, 5). Based on the results obtained, the average birth weight was 39.3 kg, slaughter weight 764.1 kg, absolute growth 724.8 kg, age at slaughter 638.5 days, average daily growth 1.14 kg, yield 54.4%, dressed carcass weight 415.6 kg, conformation 3.7, and fatness 3.3
