The Composition of the Ternary Mixture of Emulsifying Salts with Trisodium Citrate and Their Influence on the Textural Properties of Processed Cheese

Abstract:

Cílem této diplomové práce bylo studovat vliv ternárních směsí tavicích solí obsahující citronan sodný na vybrané texturní vlastnosti a pH modelových vzorků v průběhu 30 denního skladování. Pro účely experimentu byly použity fosforečnanové tavicí soli: hydrogenfosforečnan sodný(DSP), sodná sůl polyfosforečnanu (POLY), difosforečnan sodný (TSPP) a citronanová tavicí sůl: citronan sodný (TSC). Byly testovány čtyři typy třísložkových směsí (DSP:TSPP:POLY, DSP:TSC:POLY, DSP:TSPP:TSC a TSC:TSPP:POLY). V experimentu byly analyzovány vzorky bez a s úpravou pH (s cílovou hodnotou pH 5,60 až 5,80. Produkty byly podrobeny 2., 9. a 30. den skladování základní chemické analýze (obsah sušiny a hodnota pH) a texturní profilové analýze (tvrdost, kohezivnost a relativní lepivost). Vzorky byly skladovány při teplotě 6 +- 2 °C. V průběhu experimentu bylo zaznamenáno významné zvyšování tvrdosti při použití DSP:TSPP v poměru (1:1)až(3:4) a při aplikaci TSC:TSPP v poměru 1:1, v obou případech při nulové koncentraci POLY. Bylo zjištěno, že s narůstající dobou skladování byla zvyšována i pevnost tavených sýrů.

Abstract:

The aim of this thesis was to study the effect of ternary mixtures of emulsifying salts containing trisodium citrate on selected textural properties and pH of model samples during a 30-day storage. Phosphate type emulsifying salts: disodium phosphate (DSP), sodium salt of polyphosphate (POLY), tetrasodium diphosphate (TSPP) and citrate type emulsifying salt: trisodium citrate (TSC) were used for the purposes of the experiment. Four types of ternary mixtures (DSP: TSPP: POLY, DSP: TSC: POLY, DSP: TSPP: TSC and TSC: TSPP: POLY) were tested. Samples without and with pH modification (the target pH value was 5.60_5.80) were analysed in the experiment. The samples were evaluated using basic chemical analysis (dry matter content, pH) and textural profile analysis (hardness, cohesiveness, relative adhesiveness).Samples were stored at 6 +- 2 °C. A significant increase on hardness was recorded at DSP:TSPP ratio (1:1) to (3:4) and at TSC:TSPP ratio 1:1 in both cases at zero concentration POLY. It was found that with increasing storage time was increased hardness of processed cheese.
