This diploma thesis was prepared in 2021 and 2022 at the Department of Postharvest Technology of Horticultural Products, Faculty of Horticulture, Mendel University in Brno. The thesis deals with the basic division and description of plant proteins, including their postprandial availability and use in the food industry.
