Abstract:
Tato práce se zabývá dekarboxylázovou aktivitou vybraných probiotických bakterií. Produkci biogenních aminů těmito skupinami mikroorganizmů lze chápat jako protiklad k jejich pozitivním dieteticko-léčebným účinkům. Proto je nutné tuto problematiku sledovat a testovat i faktory (přídavek aminokyselin, NaCl, sacharidů, pH, teplota), které by mohly dekarboxylázovou aktivitu významně ovlivnit. V rámci …more

This bachelor thesis deals with decarboxylase activity in selected probiotic bacteria. Biogenic amine production by this group of microorganisms could be considered opposit to their beneficial dietery effect. Therefore, it is neccessary to investigate this issue deeply and also test the factores which could affect the decarboxylase activity.
